I discovered the connection between sodium lactate and anxiety when remarkably calm days in my daughter were abruptly interrupted shortly after eating "natural" bacon with sodium lactate as the only unrecognizable ingredient of an otherwise simple meal. Interestingly, when my daughter had calmed down from what I would describe as one of her typical rageful, irritable, oppositional tantrums (pre-failsafe), she in her own words had felt "jittery", a term I'd never heard her use before.
